A tiny neighborhood kitchen. Stocks pulled for sixteen hours, herbs cut to order, a single chili oil we make on Sundays. No app, no QR codes, just the bowl in front of you.

Our story

A kitchen built around one bowl done well.

What The Pho started as a Sunday tradition: a pot of broth on the back burner, a stack of mismatched bowls, friends drifting in and out. We opened the doors in 2024 so the rest of the neighborhood could pull up a chair.

Every morning we roast bones with charred onion and ginger, then let the stock simmer until late afternoon. The brisket is sliced to order. The herbs come from a farm twenty minutes east. The chili oil is made on Sundays, when the kitchen is slow and the windows are open.

We don't have a tablet at the counter. We don't take reservations. We do have a bench out front and a porch cat named .
